Silenus Winery remains committed to producing what we believe are the best wines from the best appellation. Zeus, God of all Gods in ancient Greek mythology, had a son named Dionysus, God of Wine. At Dionysus’ birth Zeus appointed Silenus to teach his young son how to debauch and enjoy the finer things of life – like drinking wine! Together they traveled the world, planting grapevines and raising bees for pollination while always enjoying copious amounts of wine. They carried a fennel stalk topped with a pinecone as a sign of hospitality. The Silenus label incorporates these elements – the grapevine, the fennel staff with a pinecone and the bees. Description: Year in and year out the very best Cabernet Sauvignon comes from the block of our estate vineyard surrounding the winery. The block is planted on an ancient riverbed with soils that are gravelly and well drained, which results in very deep, rich fruit flavors. The entire vineyard is fabulous, but we like to show off this particular block by bottling a portion separately as our Estate Reserve Cabernet Sauvignon. For 2015 the reserve blend came from 6 barrels all from the Clone 15 block from our estate vineyards. Vinification: 100% Cabernet Sauvignon: Estate Vineyard, Oak Knoll District Harvest dates: September 22-23, 2015 Bottling date: July 7, 2017 Cases produced: 114 Bottle size: 750 mL Titratable Acidity: 5.68 g/L pH: 3.63 Flavours: Deep ruby red and soft velvet colors paired with intense, super-ripe cherries, berries, plum and toasty cedar greet the palate. This is a rich, soft and elegant wine with flavors of cranberry, cherry, plum and cocoa nibs. It has medium acidity and fine, well integrated tannins. A nice, long finish with red cherries, espresso and dark chocolate complete the wine. Food Pairings: Pair with red meats or enjoy with artisan cheeses to really savor the flavors of the wine.
